Ingredients
1 cup Cashews
1/2 cup Pumpkin Seeds
2 medium Garlic cloves, chopped
100g fresh Basil
Zest (grated) and juice of 1 Lemon (organic & unwaxed)
1 tsp Sea Salt
1/2 cup Olive Oil (possibly more)
Preparation
Step 1
Pop everything in your blender (no need to pick the leaves off the basil stems - just nip away any brown bits) and give it a good wizz. Scrape down the sides and wizz it again till you reach the texture you desire.
Step 2
Adjust with lemon, salt and/or garlic and store in an air tight jar in the fridge.
