Ingredients
1/2 cup Garden Peas, defrosted
1/2 ripe Avocado
Juice of 1/2 lime (or lemon)
2 Spring Onions, chopped
1/4 tsp Cayenne Pepper
1/4 tsp Coriander
(fresh coriander also works beautifully here)
1/2-1 small clove of Garlic, minced
Pinch of salt and pepper
1 slice of Sourdough or Rye
1 handful Rocket
Preparation
Step 1
Place the defrosted peas and the avocado in a small bowl. Mash it up.
Step 2
Add lemon juice and give it another stir.
Step 3
Add the spring onions, cayenne, coriander, garlic, salt and pepper. Give the whole thing a good mix.
Step 4
Place your choice of bread on a plate and load it with your avo-pea mix. As a finishing touch, place the rocket on top.
