Pickled Red Onions

Ingredients

  • Several Red Onions (5-10)

  • 250ml Vinegar (brown rice or apple cider)

  • 50ml Water

  • 2 tbsp Maple Syrup

  • 1 tsp Sea Salt

  • 1 tsp Mustard Seeds

  • 1 tsp Black Peppercorns

Preparation

Step 1

Peel the onions and cut them in half. Then slice them thinly and pop all the slices into a clean 500ml (mason) jar.


Step 2

Add mustard seeds and peppercorns to the red onions.


Step 3

In a small pot, on low heat, combine vinegar, water, maple syrup and salt. Once the mixture is steaming - not boiling - remove it from the heat and pour it over the red onions till the jar is completely full.


Step 4

Leave to cool completely, then secure with a lid and leave in the fridge over night.


Tip: These taste incredible and look beautiful in any salad, on top of some mashed avocado, as garnish on scrambled eggs - you name it!
