Ingredients
1 tbsp Olive or Avocado Oil
2 handfuls of washed Spinach
1 handful of washed Rocket
1/2 handful washed Parsley
1 tsp (White) Tahini
Salt & Pepper
Preparation
Step 1
Heat your oil in a small pan and place all the greens in the pan at the same time. Slowly let it wilt while stirring.
Step 2
Once all greens are wilted and hardly any water is left in the pan, remove the pan from the heat, add the tahini and give it all a good mix.
Step 3
Place your wilted salad on a plate and top it with salt and pepper. Pair it with your favourite protein (works really well with salmon or egg) or eat it with other veg. Options are endless.
Tip
You can use most leafy greens for this recipe. I have personally used rainbow chard, wasabi mustard greens and kale with great success.
